A vegetarian fajita filled with tasty vegetables, halloumi cheese and chipotle refried beans. A few drops of oil will be needed for cooking.

1 brown onion 2 peppers 1 courgette 200 g halloumi 1 sachet Santa Maria Rio Grande Medium Fajita Seasoning Mix Santa Maria Guacamole Style Topping

1 can Santa Maria Spicy Refried Beans 1 tbsp cooking oil 0.5 onion 1 garlic clove 1 tbsp Santa Maria Chipotle Cooking Paste . Method

Slice the onion, cut the peppers into strips and chop the courgette lengthwise. Cut the halloumi into sticks. Heat up a large frying pan with a few drops of oil. Fry vegetables and halloumi until everything is browned, about 2 minutes. Add Fajita Seasoning Mix. Prepare the beans by finely chopping the onion and crushing the garlic then frying in oil before adding the chipotle paste and refried beans and stirring. Place vegetables and refried beans in warm tortillas. Top with guacamole and serve.
